Description
Nursing Education is a capstone course designed to prepare students to pursue careers in the field of nursing. Upon completion of this course, a proficient student will be able to implement communication and interpersonal skills, maintain residents’ rights and independence, provide care safely, prevent emergency situations, prevent infection through infection control, and perform the skills required of a nursing assistant. At the conclusion of this course students may sit for the Certified Patient Care Technician (CPCT) exam, or if students have logged 40 hours of classroom instruction and 20 hours of classroom clinical instruction, and if they have completed 40 hours of site-based clinical with at least 24 of those hours spent in a long-term care facility through a Department of Health approved program, they are eligible to take the certification examination as a Certified Nursing Assistant (CNA).

Exploring Therapeutic Diets: Creating a Diet Tray

On board in class:
You are working and still in orientation at a local LTC facility. You and your mentor are admitting a new resident. While covering the nutrition portion of the orientation your mentor asks you to observe how dietary processes patient data and preferences to create meals for the residents. You and the dietary employee you are working with are tasked with creating a "food tray" for the resident that follows the USDA Myplate recommendations and the resident’s specific diet needs. Use whatever craft supplies you wish to use. ***Make sure you choose the correct diet before creating the tray!***

Reflection:

Create and submit a google document that contains that following:
Your patients name and therapeutic diet
A clear picture of your diet tray with written description of food/liquids included. 
Explanation of how your diet tray also meets nutritional needs of the elderly and myPlate guidelines
Explanation of why your patient needs the therapeutic diet plus other potential reasons a patient may benefit from this diet
A list of foods YOU would choose to put on YOUR diet tray if you had to follow this diet. Predict why you were asked to do this. 
EXTENSION: While monitoring the resident, the CNA notices he/she coughs and gags when drinking water, suggesting dysphagia (difficulty swallowing). Considering this new observation, how might the diet order need to be modified? What specific diet would now be safer?


Grading:

50 - diet tray showing myPlate portion recommendations and foods chosen that fit the therapeutic diet
10 - Explanation of why the diet was chosen
10 - Detailed information about specific therapeutic diets
10 - Your food preferences and your thoughts on why you had to complete this activity
10 - Addressed extension question and answered thoroughly
10 - Neatness, organization, grammar of Google Doc
